White Chocolate Bread Pudding

Our cast of characters (someone look familiar, yes?)

 

Soak the dried cherries/cranberries in the brandy for a MINIMUM of one hour. Meanwhile, bring the rest of the ingredients to room temperature.

 

 

Drain the berries. Liberally grease a crock pot with butter. Then more layering (it's a theme, beeyotches).  First half the bread, then half the berries and chocolate. Lather, rinse, repeat.

 

 

Whisk together the eggs and sugar until smooth.

 

 

Added the half-and-half and vanilla.

 

 

Pour over the bread, gently pressing the bread to ensure it gets moist. (Talk drink to it and ply it with liquor, just to be sure.) Cook in on high with cover on for approximately 1 hour 45 minutes.

 

 

2 hours later...

 

 

Diabetic death wish on a plate. Tasty. Moist. A bit too rich, especially the cranberries, which were way too sweetened to begin with. Topped with low fat, unsweetened yogurt. I like irony.
